Ice Cream Cake

My kids love Ice Cream. It’s one of their favorite go-to after dinner desserts, and what's better than plain old ice cream? Ice Cream Cake. This is a staple for the twin's birthday. With all the food allergies my son faces we are so happy when we find things he can eat. Unfortunately he cannot eat most store brought ice cream cakes but I figured out a way to create a cake at home that he can have, completely Peanut, Tree Nut, Soy, and Gluten free!

Ingredients

  • 1 - 1.5 qt of Breyers Vanilla Ice Cream

  • 1 - 1.5 qt of Breyers Chocolate Ice Cream

  • 1/2 box of EnjoyLife®
    Double Chocolate Crunchy Cookies

  • 1 Container of Cool Whip (thawed)

  • 1 Container of Reddi Whip

THE CAKE

Start by allowing the ice cream to soften on your counter for

about 45 min -1 hour. While ice cream is softening,

line two 9 inch cake pans with plastic wrap.

 

Once Ice Cream is soft, spread each flavor in separate cake pans.

Cover with plastic wrap and refreeze overnight.

 

Crush the EnjoyLife® cookies in a plastic bag until crumbs.

Put aside for use in the assembly of the cake.

 

When ice cream is completely re-frozen remove from freezer. Place chocolate ice cream cake pan face down on a serving plate so that

it removes from the pan. Slowly peel off the plastic wrap.

Take the cookie crumbs and spread across the top.

 

Place vanilla ice cream cake pan face down on top of chocolate ice cream and cookie crumbs. Place back in the freezer for a bit if the ice cream is starting to melt so that it makes it easier to ice.

ICING THE CAKE

Remove from freezer again and use the Cool Whip

to ice the entire cake. Once fully iced place back into freezer

until time to serve.

Right before serving the cake remove from freezer and use

Reddi whip to decorate the top and around the outside. You can

use sprinkles as well (as long as they are safe for your allergies)

if you desire to add additional decoration.

Serve immediately and ENJOY!

**I made this cake so it is Peanut, Tree Nut, Soy, and Gluten free based on the ingredients of everything I am using. If you are worried about allergies I recommend checking all ingredients before using anything to be certain it contains no allergens.**

 

SUBSTITUTIONS: If you have additional allergies like milk or egg feel free to substitute other ice cream types that cater to your allergies. EnjoyLife® products are free of the top 8 allergens and are always my go to for anything when it comes to my son. You can also substitute other flavors of ice cream or cookies if you so desire to truly customize your cake. The possibilities are limitless.
